Ingredients

  • 1 1/2 cups buttermilk biscuit mix
  • 1/3 cup sugar
  • 1/4 cup chopped pecans
  • 1/2 cup milk
  • 1 egg
  • 1/2 teaspoon vanilla
  • 2 tablespoons cooking oil
  • 1/3 cup buttermilk biscuit mix
  • 1/3 cup brown sugar
  • 2 tablespoons butter

Instructions

  1. Combine 1 1/2 cups biscuit mix, sugar, and chopped pecans in a mixing bowl.
  2. Add milk, egg, vanilla, and cooking oil; beat by hand until well mixed.
  3. Pour the batter into a greased 8-inch round microwave-safe dish.
  4. In a separate bowl, combine the remaining biscuit mix, brown sugar, and butter until crumbly.
  5. Sprinkle the crumb mixture evenly over the batter.
  6. Microwave on High for 4 to 7 minutes, rotating the dish a half turn after 2 minutes.
  7. Check for doneness at 4 minutes; cake is done when the top is almost dry and springs back when touched.
  8. Cool for 15 minutes, then drizzle with Orange Glaze.
