Quick And Easy Fried Rice

Ingredients

  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Butter
  • 1/2 whole Onion, Diced
  • 2 whole Eggs
  • 4 cups Rice, Cooked (any Kind Will Work!)
  • 1 cup Frozen Peas
  • 1 cup Shredded Carrots
  • Chopped Chicken, Beef, Pork, Or Shrimp, If Desired
  • 2 Tablespoons Teriyaki Sauce
  • 3 Tablespoons Soy Sauce
  • 2 dashes Pepper

Instructions

  1. Heat olive oil and butter in a large skillet or wok over medium/high heat. Once hot, add onions and cook until they are slightly translucent. Remove from skillet and set aside.
  2. Crack eggs into the skillet and stir immediately as they will cook quickly. Once eggs are cooked, add rice, onions, peas, carrots, and meat if you are using it. Add terriyaki, soy sauce, and pepper. Heat thoroughly.
  3. Great as leftovers, too!
