A quick and flavorful Mexican lasagna featuring seasoned ground beef, chili, tomatoes, and melted cheese layered between tortillas, perfect for a hearty family meal.

Ingredients

  • 1 lb. lean ground beef
  • 1 small diced onion
  • 1 pkg. taco seasoning mix
  • 1 can chili with beans
  • 1 small can Ro-Tel diced tomatoes and onions
  • 1 pkg. (3 cups) Mexican cheese, shredded
  • 10-inch tortillas

Instructions

  1. Brown the ground beef in a skillet, then add the diced onion and cook until softened.
  2. Add the taco seasoning mix, chili with beans, and diced tomatoes with onions to the beef mixture. Stir to combine.
  3. Arrange a layer of 10-inch tortillas in the bottom of a 9 x 8-inch baking pan.
  4. Spread a layer of the meat mixture over the tortillas.
  5. Sprinkle a layer of shredded Mexican cheese over the meat mixture.
  6. Add another layer of tortillas on top, followed by the remaining meat mixture.
  7. Finish with a final layer of shredded cheese on top.
  8. Bake at 350°F (175°C) for about 20 to 30 minutes until the cheese is melted and bubbly.
