- In a small bowl, combine nuts, raisins, and coconut; set aside.
- Core the apple and peel the top third.
- Place the apple in a microwave-safe dish.
- Fill the center of the apple with the nut mixture and sprinkle with cinnamon.
- Pour apple juice into the dish and pour maple syrup over the apple.
- Cover and microwave on high for 2-3 minutes or until the apple is tender, basting and rotating each minute.
- Serve warm.
