Quick beef and broccoli combines tender steak with crisp vegetables in a savory soy-based sauce, perfect for a fast, satisfying meal suitable for busy weeknights.

Ingredients

  • 1 lb. flank steak
  • 1/4 cup soy sauce
  • 1 tablespoon dry sherry
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 2 stalks broccoli
  • 3 tablespoons vegetable oil, divided
  • 1 small onion
  • 1/2 cup sliced fresh mushrooms
  • hot cooked rice

Instructions

  1. Slice steak diagonally across the grain into thin strips and place in a shallow dish.
  2. In a small bowl, combine soy sauce, sherry, cornstarch, and sugar to make the marinade.
  3. Pour the marinade over the steak and set aside to marinate.
  4. Cut broccoli into flowerets and thinly slice the stalks.
  5. Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium-high heat for 1 minute.
  6. Add broccoli and onion to the wok and stir-fry for 2 minutes. Remove from wok and set aside.
  7. Pour the remaining 1 tablespoon of oil into the wok, coating the sides.
  8. Add the marinated steak to the wok and stir-fry for 1 to 2 minutes.
  9. Return the broccoli mixture to the wok and stir to combine.
  10. Serve the beef and broccoli over hot cooked rice.
