Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon cinnamon
  • 3/4 cup sugar
  • 2 beaten eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 1/2 cups grated carrots
  • 1 1/2 cups ground pecans or walnuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sift together the all-purpose flour, baking soda, and cinnamon.
  3. Add sugar, beaten eggs, vegetable oil, vanilla, and salt to the dry ingredients.
  4. Blend in the grated carrots and ground pecans or walnuts with a few swift strokes.
  5. Pour the batter into a greased 5 x 9-inch loaf pan.
  6. Bake in the preheated oven for 1 hour.
  7. Cool in the pan for 10 minutes.
  8. Turn out onto a rack to cool completely.
