Ingredients

  • 2 lb. lean ground beef
  • 1 onion, sliced
  • 2 c. tomato juice
  • 1 can (4 oz.) mushrooms
  • 2 c. water
  • 1 tsp. prepared mustard
  • garlic salt and pepper to taste
  • 4 oz. curly noodles
  • 1 c. plain yogurt

Instructions

  1. Brown the ground beef in a large skillet or heavy pot; pour off any fat.
  2. Add sliced onion, tomato juice, mushrooms, water, and seasonings; bring to a boil.
  3. Cover and simmer until at least half the liquid has evaporated.
  4. Add curly noodles and cook until almost dry.
  5. Stir in plain yogurt (light sour cream) and heat through over low heat without boiling.
