Quick Herbed Zucchini

A quick and flavorful herb-infused zucchini sauté featuring fresh herbs, onions, and optional cream, perfect for a light side dish or summer meal.

Ingredients

  • 2 large zucchini
  • 3 Tbsp. butter or margarine
  • 2 medium onions
  • 1/2 tsp. salt
  • 1/2 tsp. dried thyme leaves
  • 1/2 tsp. dried basil leaves
  • 1/2 cup whipping cream
  • chopped parsley for garnish

Instructions

  1. Slice the zucchini into 1/4-inch slices.
  2. In a heavy skillet, sauté the zucchini in heated butter for 3 minutes, turning once. Remove from the pan and set aside.
  3. In the same pan, sauté the onions until soft, but not browned.
  4. Combine the zucchini with the onions in the skillet.
  5. Add the salt, dried thyme, and dried basil leaves.
  6. Heat slowly over low heat.
  7. Add the whipping cream, if using.
  8. Heat but do not boil.
  9. Arrange on a serving platter and garnish with chopped parsley.
