Ingredients

  • 3/4 cup dark seedless raisins
  • 1 cup boiling water
  • 1-1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 7 packets sugar substitute
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 cup vegetable oil or melted margarine
  • Non-stick vegetable spray

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Spray a 9x5-inch loaf pan with non-stick vegetable spray and lightly dust with flour.
  3. Combine raisins and boiling water; set aside for 30 minutes to soften.
  4. In a large mixing bowl, combine all-purpose flour, baking soda, sugar substitute, cinnamon, and salt.
  5. Add the soaked raisins with their liquid, egg, vanilla extract, and vegetable oil or melted margarine to the dry ingredients.
  6. Mix just until the dry ingredients are moistened; do not overmix.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 40 to 45 minutes until the bread is golden brown and firm to the touch.
  9. Let the bread stand for 5 minutes, then remove from pan and place on a cooling rack.
  10. Serve warm or slice and toast as desired.
