Ingredients

  • 4 eggs
  • 3 cups diced zucchini
  • 1/2 cup chopped onion
  • 1/4 cup chopped parsley
  • 1 clove garlic, minced
  • 1/2 cup vegetable oil
  • 1/2 cup grated cheese
  • 1 cup Bisquick
  • 1/2 teaspoon oregano
  • 1/2 teaspoon bell seasoning
  • salt to taste

Instructions

  1. In a large bowl, beat the eggs.
  2. Add diced zucchini, chopped onion, chopped parsley, minced garlic, vegetable oil, grated cheese, Bisquick, oregano, bell seasoning, salt, and pepper.
  3. Mix thoroughly until well combined.
  4. Pour the mixture into a lightly greased 13 x 8-inch glass baking dish.
  5. Bake in a 350°F (175°C) oven for 25 to 30 minutes, or until set and lightly browned.
  6. Remove from oven and let cool slightly.
  7. Cut into squares and serve hot or cold.
  8. Can be frozen and reheated for later.
