A quick and refreshing lime Jell-O salad combining cottage cheese, cucumber, onion, and pecans, perfect for a light, flavorful appetizer or side dish enjoyed childhood-style.

Ingredients

  • 1 lb cottage cheese
  • 1 small cucumber
  • 1 small onion
  • 1/2 cup pecans
  • 1/2 cup salad dressing
  • 1 package lime Jell-O
  • 1/2 cup hot water

Instructions

  1. Chop cucumber, onion, and pecans very finely.
  2. Add cottage cheese and salad dressing to the chopped ingredients and mix well.
  3. Dissolve the lime Jell-O in 1/2 cup of hot water.
  4. Pour the dissolved Jell-O immediately over the mixture of cottage cheese, vegetables, and pecans.
  5. Allow it to set in the refrigerator until firm, which will happen quickly.
