Ingredients

  • 1 (10 3/4 oz.) can condensed tomato soup
  • 1 (10 3/4 oz.) can condensed cream of mushroom soup
  • 2 1/2 cups water
  • 2 pounds beef stew meat
  • 2 bay leaves
  • 3 medium potatoes
  • 4 carrots
  • 1 pound fresh mushrooms
  • 1 tablespoon quick cooking tapioca

Instructions

  1. In a Dutch oven, stir the condensed tomato soup, condensed cream of mushroom soup, and water until smooth.
  2. Add the beef stew meat and bay leaves.
  3. Cover and bake at 325°F for 1 hour and 30 minutes.
  4. Stir in the peeled potatoes, sliced carrots, halved mushrooms, and tapioca.
  5. Cover and bake for an additional hour, or until the meat and vegetables are tender.
  6. Remove the bay leaves before serving.
