Harvest Turkey Soup
A hearty harvest-inspired turkey soup with tomatoes, carrots, and potatoes simmered in flavorful broth with wine and herbs, perfect for comforting family dinners.
Ingredients
- 1 lb. Lean ground turkey ⓘ
- 1 Medium onion, chopped ⓘ
- 1 tsp. Oregano
- 1 tsp. Italian seasoning ⓘ
- 3 Large firm ripe tomatoes, chopped ⓘ
- 3 Large carrots, thinly sliced ⓘ
- 1 Large potato, peeled and diced
- 6 c. Beef broth ⓘ
- 1 c. Tomato juice ⓘ
- 1 c. Dry red wine ⓘ
- 1 Tbsp. Worcestershire sauce ⓘ
- 1/2 c. Small dry pasta ⓘ
- 1 tsp. Hot pepper sauce ⓘ
Instructions
- Grease a 4-5 quart saucepan and add the ground turkey, chopped onion, oregano, and Italian seasoning.
- Cook over medium heat, stirring often, until the turkey is no longer pink and the onion is soft, about 5 minutes.
- Add chopped tomatoes, sliced carrots, diced potato, beef broth, tomato juice, red wine, and Worcestershire sauce.
- Increase heat to medium-high and bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
- Add the dry pasta, replace the cover, and cook for an additional 5 minutes or until the pasta is tender.
- Stir in hot pepper sauce and serve.
