Ingredients

  • 2 1/2 cups whole wheat flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 beaten egg
  • 1/2 cup molasses
  • 1/4 cup brown sugar
  • 1/4 cup sesame, peanut or safflower oil
  • 1 teaspoon grated lemon or orange peel
  • 2/3 cup yogurt

Instructions

  1. Mix the whole wheat flour, cinnamon, salt, and soda together in a bowl.
  2. In a separate bowl, combine the beaten egg, molasses, brown sugar, oil, and grated lemon or orange peel.
  3. Alternate adding the egg mixture and yogurt to the dry ingredients, mixing well after each addition.
  4. Pour the batter into a buttered baking pan.
  5. Bake in a preheated 375°F (190°C) oven for about 50 minutes, or until a toothpick inserted in the center comes out clean.
