Ingredients

  • 3 Tbsp. melted fat or salad oil
  • 3/4 c. chopped onion
  • 2 tsp. salt
  • dash of pepper
  • 1 lb. ground beef
  • 2 1/2 c. canned tomatoes
  • 1 can corn
  • 1 pkg. corn muffin mix

Instructions

  1. Heat fat in skillet.
  2. Add chopped onion and seasonings (salt and pepper).
  3. Brown ground beef and drain off excess fat.
  4. Add canned corn and tomatoes and bring to a boil.
  5. Pour mixture into a 2-quart baking dish.
  6. Prepare the corn muffin mix according to package instructions and spoon over the mixture.
  7. Bake at 400°F for 30 to 40 minutes.
