Ingredients

  • 2 Tbsp. oil
  • 1 medium onion
  • 1 lb. ground beef
  • 2 c. canned tomatoes
  • 2 c. cream-style corn
  • 1 c. milk
  • 1 c. uncooked yellow cornmeal
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. chili powder
  • 1/2 c. ripe olives

Instructions

  1. Heat oil in a skillet and cook the chopped onion until soft.
  2. Add ground beef and cook until browned.
  3. Stir in canned tomatoes, cream-style corn, milk, cornmeal, salt, and chili powder. Mix well.
  4. Add ripe olives to the mixture.
  5. Cover the pie with cubed cheese.
  6. Cook covered over low heat for about 20 to 25 minutes until cheese is melted and heated through.
