Ingredients

  • 2 cloves garlic
  • 1 Tbsp. olive oil
  • 2 (14 oz.) cans chicken stock
  • 2 (14 oz.) cans vegetable stock
  • 1 (9 oz.) pkg. fresh tortellini
  • 1 (14 oz.) can Italian stewed tomatoes
  • 1/2 bunch fresh spinach
  • 6 fresh basil leaves

Instructions

  1. Saute garlic cloves lightly in olive oil.
  2. Add chicken or vegetable stock and fresh tortellini.
  3. Cook until tortellini is tender, about 8 to 10 minutes.
  4. Add mashed stewed tomatoes, torn spinach, basil leaves or pesto.
  5. Simmer for 2 minutes.
  6. Serve immediately, topped with freshly grated Parmesan or Romano cheese.
