Ingredients

  • 1 lb. fresh asparagus spears

  • 1/2 c. pine nuts, toasted

Instructions

  1. Snap off tough ends of asparagus.
  2. Remove scales from stalks with a knife or vegetable peeler, if desired.
  3. Cut off asparagus tips; set aside.
  4. Thinly slice stems; set aside.
  5. Saute minced shallot in melted butter in a large skillet over medium heat until tender.
  6. Add rice to the skillet and stir to coat.
  7. Pour in white wine and cook, stirring constantly, until the liquid cooks down.
  8. Add chicken broth a ladleful at a time, stirring constantly, allowing each addition to be absorbed before adding more, until rice is tender, about 20 minutes.
  9. Stir in chopped asparagus stems during the last 10 minutes of cooking.
  10. Add the chopped asparagus tips, whipping cream, grated Parmesan, minced garlic, salt, and pepper.
  11. Cook for an additional 5 minutes, stirring occasionally.
  12. Remove from heat, sprinkle with toasted pine nuts, and serve.
