Ingredients

  • 1 box yellow cake mix
  • 4 eggs
  • 1/2 c. vegetable oil
  • 1 Tbsp. vanilla extract
  • 1 tsp. cinnamon
  • 2 c. grated unpeeled zucchini
  • 1/2 c. raisins
  • 1/2 c. chopped nuts

Instructions

  1. In a mixing bowl, combine cake mix, eggs, vegetable oil, vanilla extract, and cinnamon. Mix for 6 to 7 minutes.
  2. Fold in grated zucchini, raisins, and chopped nuts.
  3. Spoon the mixture into a greased and floured 10-inch fluted tube pan.
  4. Bake at 350°F for 40 to 50 minutes or until a toothpick comes out clean.
  5. Sprinkle with confectioners sugar, if desired.
