Instructions
- Preheat oven to 375°F.
- Slice the yellow squash and boil until tender.
- Blend all ingredients except the Ritz crackers into a bowl.
- Mix and blend together with a hand mixer at low speed.
- Pour the mixture into a 2-quart casserole dish.
- Top with crushed Ritz crackers.
- Melt the butter and pour it over the crackers.
- Bake for 45 minutes or until desired consistency.
