A comforting squash casserole featuring tender yellow squash blended with cheese and onions, topped with crispy Ritz crackers and butter, perfect for family dinners or potlucks.

Ingredients

  • 7 medium yellow squash
  • 1/2 white onion, diced
  • 1 egg
  • 1/2 sleeve Ritz crackers
  • dash of salt
  • 3/4 cup medium grated cheese
  • 1/2 stick butter

Instructions

  1. Preheat oven to 375°F.
  2. Slice the yellow squash and boil until tender.
  3. Blend all ingredients except the Ritz crackers into a bowl.
  4. Mix and blend together with a hand mixer at low speed.
  5. Pour the mixture into a 2-quart casserole dish.
  6. Top with crushed Ritz crackers.
  7. Melt the butter and pour it over the crackers.
  8. Bake for 45 minutes or until desired consistency.
