Ingredients

  • 1 pkg. yeast
  • 1/4 cup lukewarm water
  • 1 cup cornmeal
  • 2 cups scalded milk
  • 1 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup shortening
  • 2 beaten eggs
  • 4 to 4 1/2 cups flour

Instructions

  1. Soften yeast in lukewarm water.
  2. Pour scalded milk over cornmeal, salt, sugar, and shortening; let cool.
  3. Beat in eggs and 2 cups of flour.
  4. Add yeast mixture and mix well.
  5. Stir in remaining flour to form a soft dough.
  6. Cover and let rise until doubled in bulk, about 1 hour.
  7. Stir down the dough; spoon into greased muffin cups, filling about 1/3 full.
  8. Cover and let rise until doubled in bulk.
  9. Bake at 400°F (200°C) for 15 to 20 minutes.
  10. Brush with melted butter before serving.
