Raisin "Depression" Cake

Ingredients

  • 1 cup raisins
  • 2 cups water
  • 1/2 stick butter or margarine
  • 1 cup sugar
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda

Instructions

  1. Combine raisins and water in a saucepan and bring to a boil.
  2. Reduce heat and simmer until raisins are soft, about 10 minutes.
  3. Drain raisins, reserving the cooking liquid, and mash or chop them as desired.
  4. Cream together butter and sugar until light and fluffy.
  5. Add the mashed raisins to the butter and sugar mixture.
  6. In a separate bowl, whisk together flour, baking powder, allspice, nutmeg, cinnamon, salt, and baking soda.
  7. Gradually add the dry ingredients to the wet mixture, mixing well.
  8. If the batter appears too thick, add a little of the reserved raisin cooking liquid to loosen it.
  9. Pour the batter into a greased baking pan.
  10. Bake at 350°F (175°C) for approximately 30 minutes or until a toothpick inserted into the center comes out clean.
  11. Allow to cool slightly before serving.
