Ingredients

  • 1 stick margarine
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon salt
  • 1 cup milk
  • 1 tablespoon vanilla
  • 3 cups flour
  • 3 teaspoons baking powder
  • 1.5 cups raisins

Instructions

  1. Preheat oven to 425°F and prepare a muffin pan.
  2. Cream margarine and sugar together until well blended.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla and salt.
  5. In a separate bowl, combine flour and baking powder.
  6. Gradually add dry ingredients to the wet mixture, alternating with milk, mixing until just combined.
  7. Fold in raisins gently.
  8. Fill muffin cups about two-thirds full with batter.
  9. Bake for 15 to 20 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  10. Allow muffins to cool slightly before removing from pan.
