Ingredients

  • 1 1/2 cups raisins
  • 1 1/2 cups water
  • 1 slightly beaten egg
  • 1 cup brown sugar
  • 2 tablespoons salad oil
  • 1 tablespoon grated orange peel
  • 2 1/2 cups sifted flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder

Instructions

  1. Combine raisins and water; bring to boil.
  2. Cool to room temperature.
  3. Mix egg, brown sugar, salad oil and orange peel. Stir in raisin mixture.
  4. Sift together flour, salt, baking powder and baking soda; add to the mixture, beating well.
  5. Pour into a greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf dish.
  6. Bake at 325°F for about 60 minutes.
