Ingredients

  • 1/2 cup peanut butter
  • 1 cup raisins
  • 1 tablespoon lemon juice
  • 1/4 cup powdered sugar
  • 1/2 cup shredded coconut
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon

Instructions

  1. Plump raisins by steaming.
  2. Drain and chop the raisins.
  3. Roll shredded coconut into fine pieces.
  4. Toast the shredded coconut to a light brown in a moderate oven (370°F).
  5. Mix peanut butter, chopped raisins, lemon juice, powdered sugar, salt, and cinnamon until well combined.
  6. Shape the mixture into small balls.
  7. Roll the balls in toasted shredded coconut to coat.
  8. Serve immediately or chill before serving.
