Ingredients

  • 4 Tbsp. margarine
  • 3/4 c. sugar
  • 1/4 tsp. salt
  • 2 eggs
  • 3/4 c. plain yogurt
  • 1/2 tsp. baking soda
  • 1 1/3 c. sifted flour
  • 1/3 c. raisins

Instructions

  1. Heat oven to 450°F.
  2. Grease 12 muffin cups or use paper liners.
  3. In one mixing bowl, cream together softened margarine, sugar, and salt until light and fluffy.
  4. In another bowl, beat eggs and blend in plain yogurt, baking soda, and sifted flour.
  5. Add the egg mixture to the sugar and margarine mixture and stir only to blend.
  6. The batter will be slightly lumpy.
  7. Add the raisins during the last few strokes of mixing.
  8. Fill each muffin cup two-thirds full.
  9. Bake at 425°F for about 15 minutes.
