Ingredients

  • 1 large onion
  • 4 Tbsp. oleo
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 (10 oz.) can tomatoes and green chilies
  • 1 lb. grated Cheddar cheese
  • 1 tsp. oregano
  • 1 tsp. chili powder
  • 1 (9 oz.) pkg. tortilla chips
  • 1 boiled chicken, deboned
  • 8 hard-cooked eggs

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sauté chopped onion in oleo until golden brown.
  3. Add cream of mushroom soup, cream of chicken soup, canned tomatoes with green chilies, oregano, and chili powder to the onion; simmer for 15 minutes.
  4. Cover the bottom of a 9 x 13-inch casserole dish with broken tortilla chips.
  5. Layer sliced cooked chicken over the chips.
  6. Add a layer of sliced hard-cooked eggs.
  7. Pour some of the sauce over the eggs.
  8. Sprinkle grated Cheddar cheese over the sauce.
  9. Add another layer of tortilla chips, chicken, eggs, sauce, and cheese as desired, finishing with a cheese topping.
  10. Bake at 350°F (175°C) for 30 minutes until bubbly and golden.
