Ingredients

  • 2 large chicken breasts, skinned, boned and halved
  • salt
  • 2 Tbsp. margarine or butter
  • 1/4 c. finely chopped onion
  • 3 Tbsp. raspberry jelly
  • 3 Tbsp. white vinegar
  • 1 Tbsp. brown sugar
  • 1/4 c. heavy cream

Instructions

  1. Cut chicken breast halves in half lengthwise to make 8 pieces. Lightly salt the chicken.
  2. Melt butter in a 10-inch skillet over medium heat.
  3. Add chicken pieces to the skillet and cook for 5 minutes, then turn them over.
  4. Add chopped onion around the edges of the skillet.
  5. Cook for an additional 5 to 10 minutes, or until the chicken is cooked through.
  6. Transfer chicken to a platter and keep warm.
  7. To the remaining mixture in the skillet, add raspberry jelly, white vinegar, and brown sugar, and cook until the jelly melts and the sauce thickens slightly.
  8. Pour the sauce over the chicken before serving.
