Ingredients

  • 2 (10 oz.) packages frozen red raspberries in syrup
  • 1 cup water
  • 1/2 cup sugar
  • 2 teaspoons lemon juice
  • 4 teaspoons cornstarch
  • 1/4 cup cold water
  • 1 cup milk
  • 50 large marshmallows
  • 2 cups heavy cream
  • 1 1/4 cups graham cracker crumbs
  • 1/4 cup chopped nuts
  • 1/4 cup melted butter

Instructions

  1. Heat raspberries with water, sugar, and lemon juice in a saucepan.
  2. Dissolve cornstarch in cold water, then stir into the raspberry mixture and cook until thickened and clear.
  3. Allow the raspberry mixture to cool.
  4. Melt marshmallows in milk over boiling water, then cool thoroughly.
  5. Whip the heavy cream and fold it into the marshmallow mixture.
  6. Mix graham cracker crumbs, chopped nuts, and melted butter in a 13 x 9 x 2 5/8-inch pan.
  7. Press the crumb mixture firmly into the bottom of the pan to form a crust.
  8. Spread the marshmallow cream mixture over the crust.
  9. Spread the raspberry mixture over the marshmallow layer.
  10. Refrigerate until the dessert is firm and well chilled.
