Ingredients

  • 1 cup shortening
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 3 Tbsp milk
  • 1 tsp vanilla
  • 2 cups flour
  • 1-1/2 cups quick oats
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • raspberry preserves

Instructions

  1. Cream shortening and sugars until fluffy.
  2. Add egg, milk, and vanilla. Beat well.
  3. Mix dry ingredients together, except oats.
  4. Add dry ingredients with oats to creamed mixture.
  5. Mix well and chill for 1 hour.
  6. Preheat oven and scoop dough onto baking sheets.
  7. Place a spoonful of raspberry preserves in the center of each cookie.
  8. Bake until golden and set.
