Raspberry Fingers

Raspberry Fingers are crisp, buttery pastry treats filled with sweet raspberry jam and topped with toasted almonds, perfect for a delightful tea-time snack or dessert.

Ingredients

  • 1 cup flour
  • 1/2 cup butter
  • 2 tablespoons sugar
  • 1/4 cup ground almonds
  • 1 egg yolk
  • 1/2 teaspoon almond extract
  • raspberry jam
  • 3 tablespoons chopped toasted almonds

Instructions

  1. With a pastry blender, cut butter into flour until the mixture resembles coarse meal.
  2. Mix in sugar, ground almonds, egg yolk, and almond extract.
  3. Blend to a stiff paste, using hands if necessary. Press half of the mixture into a 9-inch square pan.
  4. Spread the jam over the pressed dough.
  5. Roll out the remaining dough (chill if necessary) to a 9-inch square.
  6. Carefully and evenly place the rolled-out dough over the jam.
  7. Sprinkle with chopped toasted almonds.
  8. Bake in a 350°F oven for 15 minutes.
  9. While still warm and in the pan, cut into finger-sized pieces.
