Ingredients

  • 3 oz. raspberry gelatin
  • 1 1/2 cups boiling water
  • 10 oz. frozen raspberries in syrup, thawed and undrained
  • 15 1/2 oz. can crushed pineapple, undrained
  • 2 cups commercial sour cream
  • 1/2 cup chopped pecans

Instructions

  1. Dissolve the raspberry gelatin in boiling water.
  2. Stir in the thawed raspberries, undrained crushed pineapple, and chopped pecans; blend well.
  3. Spoon 1 1/2 cups of the gelatin mixture into a lightly oiled 8-cup mold.
  4. Chill until the gelatin is set.
  5. Spread 1 cup of sour cream over the raspberry layer.
  6. Spread the remaining raspberry mixture over the sour cream layer.
  7. Chill until the raspberry layer is firm.
  8. Spread 1 cup of sour cream over the raspberry layer.
  9. Top with the remaining raspberry mixture and chill until the entire salad is firm.
