Ingredients

  • 2 (10 oz.) pkg. frozen raspberries
  • 2 envelopes unflavored gelatin
  • 3/4 cup cold water
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon almond extract
  • 4 egg whites
  • dash of salt
  • 1/4 cup sugar

Instructions

  1. Thaw the berries, reserve some for garnish, then wrap and return to freezer.
  2. Soften the gelatin in cold water.
  3. Combine raspberries, softened gelatin, 2 tablespoons sugar, and lemon juice in a saucepan.
  4. Heat until the gelatin dissolves completely.
  5. Add almond extract and allow the mixture to cool until it reaches the consistency of egg whites.
  6. Beat egg whites and a pinch of salt until soft peaks form.
  7. Gradually add 1/4 cup sugar while beating until stiff peaks form.
  8. Whip the cream and set aside 1/4 cup for garnish.
  9. Fold the beaten egg whites and whipped cream into the raspberry mixture gently.
  10. Pour the mixture into a 1-quart souffle dish, optionally extending with a wax paper collar.
  11. Refrigerate until ready to serve.
  12. Garnish with whipped cream and the reserved berries.
