Ingredients

  • 1 cup flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 stick margarine, melted
  • 2 eggs, beaten
  • 1/2 onion, chopped
  • 1 cup milk
  • 1/2 pound Monterrey Jack cheese, grated
  • 1/2 pound cheddar cheese, grated
  • 10 to 16 ounces spinach, chopped and cooked

Instructions

  1. Mix the flour, salt, and baking soda in a bowl.
  2. Add the melted margarine, beaten eggs, chopped onion, milk, grated cheeses, and cooked spinach to the dry ingredients and mix well.
  3. Pour the mixture into a greased baking dish.
  4. Bake at 325°F (163°C) for 20 to 25 minutes until set and golden.
  5. For individual servings, pour the mixture into muffin pans and bake accordingly.
