Raw Spinach Salad

A fresh and vibrant spinach salad combining tender greens, ripe tomatoes, green onions, and crunchy celery, topped with dressing and garnished with a hard-cooked egg for a wholesome meal.

Ingredients

  • 1/2 lb. tender spinach
  • 2 firm red tomatoes, diced
  • 5 green onions, sliced including half of tops
  • 1/2 cup diced celery
  • 1/2 teaspoon salt
  • French dressing

Instructions

  1. Chill all ingredients.
  2. Carefully wash spinach leaves through 3 or 4 waters.
  3. Drain well and chill.
  4. Shred coarsely with kitchen scissors and combine with tomatoes, green onions, celery and salt.
  5. Drizzle dressing over the top and toss lightly until vegetables are well coated with dressing.
  6. Garnish with a hard-cooked egg.
  7. Serve immediately on individual plates.
