Ingredients

  • 4 eggs
  • 1 1/2 cups vegetable oil
  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 3 cups grated carrots
  • 1 1/2 cups chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 13 x 9-inch baking pan.
  3. Beat eggs and vegetable oil in a small bowl until well combined.
  4. In a large bowl, combine flour, sugar, baking soda, baking powder, cinnamon, and salt.
  5. Add the egg mixture to the dry ingredients and mix well.
  6. Stir in the grated carrots and chopped pecans.
  7. Pour the batter into the prepared pan.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool before spreading with Cream Cheese Icing.
