Ingredients

  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1 1/2 cups cold water
  • 3 egg yolks
  • 1/4 cup fresh lemon juice
  • 1 tablespoon margarine
  • grated peel of 1 lemon
  • 1 baked pie crust
  • 3 egg whites

Instructions

  1. Mix sugar and cornstarch together in a microwave-safe bowl.
  2. Add cold water and stir to combine.
  3. Cook in microwave, stirring often, until the mixture reaches a medium consistency.
  4. Add beaten egg yolks, lemon juice, and grated lemon peel to the mixture.
  5. Return to microwave and cook until thickened.
  6. Use a hand blender to smooth out if too thick.
  7. Stir in margarine until melted and incorporated.
  8. Pour the lemon filling into the baked pie crust.
  9. In a separate bowl, beat egg whites with 1/3 cup sugar until stiff peaks form.
  10. Spread the meringue over the hot lemon filling, sealing to the edges of the crust.
  11. Bake at 350°F (175°C) for 15 to 20 minutes until the meringue is golden brown.
