Ingredients

  • 1 1/2 lb. red snapper
  • 1 (15 oz.) can tomato sauce
  • 1 (16 oz.) can stewed tomatoes
  • 1 medium onion, sliced
  • 1 bell pepper, chopped
  • 2 carrots, sliced
  • 2 stalks celery
  • 1 tsp. oregano
  • 1 tsp. garlic salt
  • 1/2 tsp. basil
  • 1 clove garlic
  • salt and pepper to taste
  • 2 Tbsp. oil

Instructions

  1. Saute garlic lightly in oil; add vegetables and saute until onion is tender.
  2. Add tomato sauce and stewed tomatoes; sprinkle all with seasonings.
  3. Cover and simmer for 10 minutes to blend flavors.
  4. Add snapper fillets, cut into serving size portions. Bring to a boil; lower heat and simmer for 15 minutes or until fish is firm and flaky.
  5. Can keep warm for 1 to 2 hours.
  6. Serve with cheese bread and salad.
