A hearty vegetarian loaf combining vegetable protein, tofu, and nuts, seasoned with herbs and vegetables for a flavorful, protein-packed main suitable for family dinners or gatherings.

Ingredients

  • 1/2 can redi-burger (vegetable protein)
  • 1/2 lb tofu
  • 1 cup ground pecans or walnuts
  • 1/2 cup chopped onions
  • 1/2 cup sliced black olives
  • 1/2 cup chopped red bell pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground rosemary

Instructions

  1. Put the Redi-burger and tofu into a food processor or mash with a fork until well mixed together.
  2. Transfer the mixture to a mixing bowl and add the ground pecans or walnuts, chopped onions, sliced black olives, chopped red bell pepper, garlic powder, onion powder, and ground rosemary.
  3. Mix all ingredients thoroughly with a fork or spoon.
  4. Transfer the mixture into a baking dish and bake at 350°F (175°C) for 40 minutes.
