Ingredients

  • 2 c. black-eyed peas, cooked
  • 2 medium onions, thinly sliced and diced
  • 1/8 tsp. dried red pepper, crushed (optional)
  • 1/4 tsp. salt
  • 1/2 c. bell pepper, thinly sliced and diced
  • 1/2 c. canola oil
  • 1/4 c. wine or cider vinegar
  • 1 clove garlic, crushed and finely chopped

Instructions

  1. Drain the black-eyed peas and rinse if using canned.
  2. Combine all ingredients including peas, onions, bell pepper, red pepper, salt, oil, vinegar, and garlic.
  3. Refrigerate the mixture, covered, overnight or longer to allow flavors to meld.
  4. Turn several times with a slotted spoon to marinate evenly.
  5. If doubling or tripling the recipe, reduce the amount of garlic and red pepper accordingly.
  6. Remember that strong herbs have a 'multiplier' effect, so adjust to taste.
