Ingredients

  • canned beans (pintos or kidney beans)
  • 1 can tomato sauce
  • red peppers
  • white pepper
  • Tabasco sauce
  • onions
  • 1 can tomato paste
  • kieya peppers
  • chili powder
  • black pepper
  • celery mush
  • hamburger
  • seasonings (to taste)
  • 1.5 lb. beef chuck roast, coarsely ground
  • 1.5 lb. pork shoulder, cut into 1/2-inch cubes
  • 1 large onion, chopped
  • 3 large garlic cloves, minced
  • 3 cups beer or water
  • 1 cup Special Tomatoes
  • 8 oz. can tomato sauce
  • 1/2 cup chili powder
  • 1 tablespoon salt

Instructions

  1. Stir both meats, chopped onion, and minced garlic in a heavy, large saucepan over medium heat until the meat is no longer pink.
  2. Mix in beer, then add all remaining ingredients except masa, including canned beans, tomato sauce, tomato paste, peppers, spices, and seasonings.
  3. Cover and simmer until the chili is reduced to about 12 cups, stirring occasionally, approximately 3 hours.
  4. Degrease the chili by removing excess fat from the surface.
  5. Stir dissolved masa into the chili to thicken.
  6. Cover and simmer for an additional 30 minutes.
  7. Refrigerate overnight to allow flavors to blend before serving.
