Ingredients

  • 1 can Shoepeg corn
  • 1 can LeSueur English peas (17 oz.)
  • 1 can French-style green beans
  • 1 small jar pimentos
  • 1 c. celery
  • 1 c. green pepper
  • 1 c. onion
  • 3/4 c. apple cider vinegar
  • 1/2 c. oil
  • 1/4 c. sugar
  • 1 tsp. salt
  • 1/2 tsp. pepper

Instructions

  1. Boil vinegar, oil and sugar.
  2. Heat until sugar is dissolved well.
  3. Add salt and pepper.
  4. Let cool; pour over vegetables. Refrigerate several hours or overnight.
  5. Keeps real well in covered jar.
  6. Cutting the vegetables real fine will make a more attractive dish.
