Reuben Foldovers combine tender corned beef, tangy sauerkraut, and Swiss cheese wrapped in flaky dough, baked to golden perfection—an easy, savory handheld delight perfect for any lunch or dinner.

Ingredients

  • 2 c. Bisquick or baking mix
  • 1/2 c. cold water
  • 5 oz. thin slice corned beef
  • 8 oz. sauerkraut, well drained
  • 3 Tbsp. Thousand Island dressing
  • 1 c. shredded Swiss cheese

Instructions

  1. Heat oven to 400°F.
  2. Mix baking mix and water until soft dough forms.
  3. Beat vigorously at least 20 strokes.
  4. Gently smooth dough into a ball on a floured board and knead 5 times.
  5. Roll dough into a rectangle at least 12 x 18 inches.
  6. Cut into 6 squares.
  7. Layer corned beef over the triangle half of each square.
  8. Mix sauerkraut, dressing, and cheese; spoon over corned beef.
  9. Fold dough over sauerkraut mixture, forming a triangle.
  10. Press edges with a floured fork to seal.
  11. Brush tops with butter or margarine.
  12. Sprinkle with caraway seed or poppy seed, if desired.
  13. Bake on ungreased cookie sheet until golden brown, approximately 20 minutes.
