Ingredients

  • 1/2 cup whole grain cornmeal
  • 1 egg
  • 1/4 cup rice flour
  • 1/4 teaspoon salt
  • 2/3 cup rice milk
  • 1 tablespoon oil
  • 1 tablespoon sugar
  • 2 teaspoons baking powder

Instructions

  1. Mix the cornmeal with rice milk and let it stand for 10 minutes.
  2. Stir in the egg, rice flour, salt, oil, sugar, and baking powder until well combined.
  3. Pour the batter into a greased 8-inch pan.
