Ingredients

  • 1 1/2 cups light brown sugar
  • 1/2 cup shortening
  • 1 egg
  • 1 cup sour milk
  • 2 1/2 cups flour
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups diced rhubarb
  • 1/2 cup chopped pecans
  • 1/3 cup sugar
  • 1 tablespoon melted butter

Instructions

  1. Combine brown sugar, shortening, and egg in a bowl and mix well.
  2. In another bowl, combine sour milk with vanilla extract.
  3. Add the milk mixture and sugar mixture alternately to the flour, beating well after each addition.
  4. Fold in diced rhubarb and chopped pecans.
  5. Turn the batter into two greased and floured loaf pans.
  6. Mix sugar with melted butter and sprinkle over the batter.
  7. Bake at 325° to 350°F for 45 minutes or until done.
