Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup pecans
  • 1 egg
  • 1/4 cup vegetable oil
  • 2 teaspoons grated orange peel
  • 3/4 cup orange juice

Instructions

  1. In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and pecans.
  2. In another bowl, whisk together egg, vegetable oil, grated orange peel, and orange juice.
  3. Add the wet ingredients to the dry ingredients all at once and stir just until moistened.
  4. Stir in the rhubarb.
  5. Fill 12 lightly greased muffin cups almost to the top.
  6. Bake at 375°F (190°C) for 25 to 30 minutes.
