A vibrant, sweet and tangy rice dish featuring pineapple, orange juice, and peppers, perfect for a flavorful side or light main that appeals to all ages.

Ingredients

  • 1 (8 oz.) can pineapple slices
  • 1/3 cup chopped green pepper
  • 1/3 cup chopped sweet red pepper
  • 1/4 cup butter or margarine
  • 1 3/4 cups orange juice
  • 2 cups instant rice
  • dash of salt
  • 1/8 teaspoon curry powder

Instructions

  1. Drain pineapple slices, reserving juice, and chop pineapple.
  2. Saute chopped green and red peppers in 1 tablespoon of melted butter until tender.
  3. Add orange juice to the saucepan and bring to a boil.
  4. Stir in instant rice, remaining 3 tablespoons of butter, chopped pineapple, salt, and curry powder.
  5. Remove from heat, cover, and let stand for 10 minutes, stirring once.
  6. Garnish with red and green pepper strips before serving.
