Instructions
- Drain pineapple slices, reserving juice, and chop pineapple.
- Saute chopped green and red peppers in 1 tablespoon of melted butter until tender.
- Add orange juice to the saucepan and bring to a boil.
- Stir in instant rice, remaining 3 tablespoons of butter, chopped pineapple, salt, and curry powder.
- Remove from heat, cover, and let stand for 10 minutes, stirring once.
- Garnish with red and green pepper strips before serving.
