Ingredients

  • 1 cup chopped onion
  • 2 tablespoons shortening
  • 1 pound ground beef
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup canned peas
  • 1/4 cup liquid from peas
  • 2 1/2 cups canned tomatoes
  • 1/2 cup uncooked rice

Instructions

  1. Cook chopped onions in heated shortening until lightly browned.
  2. Add ground beef and seasonings; cook until beef is brown.
  3. Add canned peas, liquid from peas, canned tomatoes, and uncooked rice to the meat mixture.
  4. Stir lightly to combine all ingredients.
  5. Place the mixture in a greased 2-quart covered casserole dish.
  6. Bake at 375°F for 1 hour.
