Ingredients

  • 1 cup cooked rice
  • 1 egg, beaten
  • 2/3 cup shredded Swiss cheese
  • 3 eggs
  • 13 oz can evaporated milk
  • 1/2 teaspoon salt
  • pinch of nutmeg
  • pinch of sugar
  • pinch of cayenne pepper

Instructions

  1. Mix cooked rice, beaten egg, and shredded Swiss cheese.
  2. Press the mixture into a 9-inch pie pan and refrigerate.
  3. Beat eggs, evaporated milk, salt, nutmeg, sugar, and cayenne pepper.
  4. Stir in sliced ham and shredded Cheddar cheese.
  5. Pour the egg mixture into the crust.
  6. Bake at 400°F for 15 minutes.
  7. Reduce oven temperature to 300°F and continue baking for about 30 minutes.
  8. Let cool before cutting and serving.
