Rice Salad (Low-Fat)

Instructions
- In a medium saucepan, bring the water to a boil.
- Stir in the rice, cover, and remove from heat.
- Let stand for 5 minutes; then cool.
- In a large bowl, mix the cooked rice with the remaining ingredients except the dressing.
- Stir in 1/2 cup of Italian dressing and toss to combine.
- Chill the salad.
- Just before serving, toss with the remaining dressing to taste.
