A refreshing, low-fat rice salad packed with fresh vegetables, lean cheese, and Italian dressing, perfect for light meals, picnics, or healthy gatherings.

Ingredients

  • 1 1/2 cups water
  • 1 1/2 cups Minute rice
  • 1 cup shredded fat-free Mozzarella cheese
  • 1 cup sliced pepperoni, halved
  • 1 large tomato, chopped
  • 1 green pepper, cut into strips
  • 2 mushrooms, sliced
  • 6 pitted ripe olives, sliced
  • 1 cup fat-free Italian dressing

Instructions

  1. In a medium saucepan, bring the water to a boil.
  2. Stir in the rice, cover, and remove from heat.
  3. Let stand for 5 minutes; then cool.
  4. In a large bowl, mix the cooked rice with the remaining ingredients except the dressing.
  5. Stir in 1/2 cup of Italian dressing and toss to combine.
  6. Chill the salad.
  7. Just before serving, toss with the remaining dressing to taste.
